Kumquat Honey Sorbet

Vegetarian!

Ingredients
2 cups Water
1 cup Sugar
2 cups Kumquats (cut in half and seeds removed)
1 tablespoon Honey
For garnish:
Fresh mint
Candied kumquats

Step by Step Instructions
  1. Stir the water and sugar together in a saucepan and heat until the mixture thickens into a simple syrup. Let cool to room temperature.
  2. Put the sliced and de-seeded kumquats into a food processor and blend until pureed.
  3. Stir the kumquat puree, honey, and simple syrup together in a bowl, then pour the mixture into an 8 by 8 glass pan. Let sit in the freezer for a few hours, but do not let it become completely frozen.
  4. Working in batches run the puree mixture through a blender or food processor, then once all has processed spoon it back into the pan and let refreeze for a few hours.
  5. For candied kumquats: Bring 1 cup water to boil, then turn off the heat and add a 1/2 cup of sugar. Whisk the mixture vigorously. Drop some de-seeded and very thinly sliced kumquats into the mixture and let them steep for 10 minutes, then remove and allow to cool.
  6. Serve the sorbet garnished as desired.
